Today is Mama Fizzle day.
Mama Fizzle has a strange obsession with pavlova. Because she likes meringue but also I think it’s because she likes the ballerina story.
Anyway, I tried. My proportions were really not worth remembering so I will spare you those details. The rest is great you should try it.
Part 1:
Meringue loveliness. Now you want to get to this point:
In my determination to get this right I beat the egg whites with both cornstarch and cream of tartar and I really don’t know if that was necessary. Also…icing sugar. Shape into circles and bake for 1 hour on 150 C.
Part 2:
Cream. I overwhipped.
The whipping cream will need sugar AND cinnamon. Don’t forget the cinnamon.
Part 3:
Sliced apples cookied in butter, sugar, a smidgen of lemon juice, cinnamon and vanilla. I took out the apples once they were soft and let the rest caramelize.
Assembly Process:
This really would have gone down a lot better if the cream had not over whipped itself. Silly cream.
