1 Minute Cookie Pancake

It looks like minimal effort snacks have become a lifestyle for me because children are EXHAUSTING.

I couldn’t even stay awake for New Zealand’s win over India. I tried, I really did. All I had to do was wait 3 more wickets…but I suppose if I had then I’d have had to face the daily chaos that is preschool without my carefully timed night’s sleep. And then how would I have dealt with –

“Teacher! He pushed me!”

“Teacher I need to-“

“Teacher I just did this why is he-”

“Teacher I need help”

“Teacher! She bit me.”

“Teacher he’s not sitting do-”

“Teacher why is-”

It’s like a constant game of whack-a-mole where the stakes are your sanity and their education.


So no pressure.

By the time I’m home I want food and I want it quickly. So far, the microwave has been my most frequent solution.

Today I wanted a cookie. But the thought of a making a batch of cookies made me want to curl up in a weepy ball of too-hungry-to-move feelings. So I made One Cookie.

It was supposed to be a cookie, turned out to be more of a pancake type cookie. A cookie pancake.

I did the following:

  • Mixed 1 tbs butter with 1 tbs sugar
  • Added 1 egg and ¼ tsp vanilla
  • Mixed in 3 tbs flour with ½ tsp baking powder
  • Threw in some chocolate chips
  • And microwaved it for 60 seconds at 900W

Presumably my not-so carefully considered proportions led to the pancake-instead-of-cookie texture (not really complaining because who doesn’t love pancakes?) but if anyone would like to explain to me where I went wrong that’d be great. Google takes too much effort. All I really want to do these days is sleep. If I could Google while I slept that would be extremely helpful. Once the tech geniuses of the world figure out how to do that, just wake me up and let me know. I’ll probably be dreaming about an army of deceptively cute 3 year olds taking over the world.
