I had egg whites and I didn’t know what to do.
So I thought – almonds. And that’s how this happened.
Also I’m sick. This was not wholly unexpected of course. Perks of being a pre-school teacher I’m told, also one of my (sick) four year olds coughed directly into my face on Friday. So like I said, not wholly unexpected.

Now here is how to make a cake without really thinking about it:
Find some almonds. When you’re measuring them, aim for 1 cup but give up at ¾. Put it in a grinder. Make almond butter.
Take butter from the fridge and weigh it. Discover that it weighs 50 g and then decide that it is just the right amount of butter. Mix this butter into the almond butter.
Add ½ tsp of baking powder.
Add 5 tbs of honey. Taste it to see if it tastes good. If it does not, add more honey. If the honey is the problem, try something else to fix it…
Now find the 2 egg whites that instigated this whole scenario. Beat them. Fold your beaten egg whites into the other stuff.
Put it in the oven at 175 C for 16 minutes. Realise at 16 minutes that it is simply not getting cooked. Put it in the microwave on high for 2 and a half minutes.
And there you have it. An impromptu almond cake.

But of course, if you are sick, lazy and armed with 2 egg whites, you can simply do as I did, and improvise.
