My most recent epiphany in life is that avocados belong with chocolate. They make such good chocolate mousse that it was a tough call to try something new with them but here I am a few hours later with super dense and fudgy brownies – which I alone am present to appreciate.
The Parents are currently off stargazing. Apparently you can do that here. Who knew? They try to get me to come for these things but ever since my status in the family has been reduced to third wheel (thanks for that guys) I’ve tried to moderate time spent in that role.
And so my Friday night will be spent in the company of these deelicious brownies (no complaints here), which I discovered on Lexi’s Clean Kitchen.
It’s super straightforward – assuming you’re not constantly getting distracted by day 2 of a test match.*
- Melt 1 cup of chocolate with ¼ cup butter
- Add 1 blended avocado
- Whisk in 2 eggs
- Mix ½ cup (coconut) sugar, ¼ cup cocoa powder, ½ tsp baking powder, pinch of salt and 1 tsp vanilla
- Combine everything
- Bake for 20-25 mins at 175 C
My chocolate tastes have become far too bitter (by which I also mean healthy) for the Parents, so I have set myself the task of conquering this entire thing myself – but (worryingly perhaps) it really does not seem like much of a challenge.
* Did anyone else know about the helmet grill rule with regards to taking a catch? Because it always weirds me out when I learn something new in cricket so I need to be reassured that this is one of those obscure ones.
