More Banana Oat Muffins

Biggest of sisters, I made more muffins! These fit your ingredient requirements a little better than the last. No yoghurt for Mr Izzle and no baking soda for you. These don’t even need chocolate but as you can see I hadn’t anticipated that and melted chocolate for a topping anyway. It was appreciated by brother though because he doesn’t like banana splodges and needed to mask them.

I’m finding it very difficult to type with one hand because I’m half henna-ed for Eid tomorrow. So I’m going to keep this short.

  • 2 bananas need to be mushed with 1 egg, 2 tbs coconut oil, ½ cup of milk, 2 caps vanilla, and I ended up putting about 8 tbs of honey.
  • Then 2/3 cup oat flour, ½ cup oats, 1 ¾ tsp baking powder, ½ tsp cinnamon (SFizzle doesn’t like cinnamon but she didn’t notice it so I’m quite pleased with myself) and ¼ tsp salt
  • Then mix it all up.

190°C for 15 mins should do it.

And there are lovely squishy banana blobs in it that you have to be not-BrotherFizzle to enjoy.

Now I’m off to summon the minions siblings to help me cook dinner.
